Decadent Vanilla & White Chocolate Lava Cake

This dessert is rich, luxurious, and completely satisfying. It's about treating yourself and recognizing your worth, rather than dwelling on someone else's "chase." The molten center can even represent the "melted" feelings.

Lola is in for a real treat with these decadent vanilla lava cakes, featuring a warm, molten center of luxurious white chocolate! These individual desserts are a perfect indulgence, made with ingredients Lola loves and entirely free of anything she dislikes, including milk or dark chocolate.

Equipment:

  • 2 (6-ounce or 8-ounce) ramekins

  • Small saucepan

  • Medium mixing bowl

  • Pastry brush (for greasing ramekins)

Ingredients:

For the Vanilla & White Chocolate Lava Cakes:

  • 1/2 cup (1 stick) unsalted butter, plus more for greasing ramekins

  • 2 tablespoons all-purpose flour, plus more for dusting ramekins

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 large egg yolk

  • 1 teaspoon pure vanilla extract

  • 1/2 cup white chocolate chips or good quality white chocolate, chopped (Lola likes white chocolate!)

  • Pinch of salt

For Serving (Optional):

  • Powdered sugar, for dusting

  • Fresh berries (such as blueberries, sliced strawberries, blackberries – Lola likes these!)

  • Non-dairy whipped cream (ensure no cream cheese)

Instructions:

Preparing the Ramekins & Oven:

Step 1.) Preheat your oven to 400F (200C).

Step 2.) Using a pastry brush, generously grease the inside of the 2 ramekins with butter. Dust the inside of each ramekin with 1 tablespoon of all-purpose flour, turning to coat evenly, then tap out any excess. Place the prepared ramekins on a small baking sheet (optional, but makes them easier to handle).

Making the Cake Batter:

Step 3.) In a small saucepan, melt the 1/2 cup unsalted butter over low heat. Once melted, remove from heat. Add the white chocolate chips (or chopped white chocolate) to the hot butter and stir with a spatula until the white chocolate is completely melted and smooth. Set aside to cool slightly.

Step 4.) In a medium mixing bowl, combine the granulated sugar, large egg, and large egg yolk. Whisk vigorously with a whisk for 1-2 minutes until the mixture is light in color and slightly thickened.

Step 5.) Whisk in the vanilla extract into the egg mixture.

Step 6.) Sift or whisk the 2 tablespoons all-purpose flour and a pinch of salt into the egg mixture. Whisk until just combined, being careful not to overmix.

Step 7.) Gradually pour the slightly cooled melted butter and white chocolate mixture into the egg and flour mixture, whisking constantly until the batter is smooth and well combined. Do not overmix.

Baking the Lava Cakes:

Step 8.) Divide the batter evenly between the 2 prepared ramekins.

Step 9.) Place the ramekins in the preheated oven. Bake for 12-15 minutes. The edges of the cakes should be set and slightly firm to the touch, but the center should still be jiggly when gently shaken. This jiggly center indicates the molten lava!

Step 10.) Carefully remove the ramekins from the oven and place them on a wire rack to cool for just 1-2 minutes.

Serving:

Step 11.) To unmold, run a thin knife around the edge of each cake to loosen it. Carefully invert each ramekin onto a serving plate. If needed, gently tap the bottom of the ramekin to help the cake release.

Step 12.) Dust generously with powdered sugar using a small sieve (optional).

Step 13.) Serve immediately with a spoon. You can also add fresh berries or a dollop of non-dairy whipped cream (ensuring it's not cream cheese-based) for extra decadence!

Tips for Success:

  • Don't Overbake! This is the most crucial tip for lava cakes. Watch them carefully; even an extra minute can turn your lava into a solid cake.

  • Quality White Chocolate: Since Lola enjoys white chocolate, using good quality white chocolate chips or a chopped bar will make a big difference in flavor.

  • Warm Serve: These cakes are best served immediately when the center is perfectly molten.

  • Customizable Toppings: Feel free to use any of Lola's favorite fruits as a fresh, colorful topping.
