Grilled Pineapple with Yogurt and Granola

This delightful and refreshing dessert or breakfast features sweet, caramelized grilled pineapple paired with creamy vanilla yogurt and crunchy granola. It's a perfect treat for Lola, highlighting her love for pineapple and other fruits, and is completely free of chocolate or cream cheese.

Ingredients:

For the Grilled Pineapple:

  • 1 fresh pineapple, ripe

  • 1 teaspoon olive oil or melted coconut oil (optional, for brushing on pineapple before grilling)

For the Creamy Yogurt:

  • 1 cup plain Greek yogurt (ensure vegetarian, or use plain non-dairy yogurt like coconut or oat-based)

  • 1-2 tablespoons maple syrup or agave nectar (adjust to Lola's preferred sweetness)

  • 1/2 teaspoon vanilla extract

For Toppings:

  • 1/2 cup granola (ensure vegetarian and no chocolate)

  • Optional: 1/4 cup fresh blueberries, sliced strawberries, or sliced banana (Lola likes these fruits!)

  • Fresh mint leaves (optional, for garnish)

Instructions:

Preparing the Pineapple:

Step 1.) Using a knife and cutting board, carefully cut off the top and bottom of the pineapple. Stand the pineapple upright and slice away the skin. Remove any remaining "eyes" with a smaller knife.

Step 2.) Slice the pineapple into 1/2-inch thick rounds or spears. If cutting rounds, you can use a small cookie cutter or the tip of a knife to remove the tough core from each slice.

Preparing the Creamy Yogurt:

Step 3.) In a small bowl, combine the plain Greek yogurt (or non-dairy yogurt), maple syrup (or agave nectar), and vanilla extract. Whisk with a whisk until smooth and well combined.

Grilling the Pineapple:

Step 4.) Preheat your grill or grill pan to medium-high heat.

Step 5.) If desired, lightly brush the pineapple slices with olive oil or melted coconut oil using a pastry brush. This helps prevent sticking and enhances charring.

Step 6.) Place the pineapple slices on the hot grill. Grill for 4-6 minutes per side, using tongs to flip, until golden brown, tender, and showing nice grill marks.

Assembling and Serving:

Step 7.) Carefully transfer the grilled pineapple slices to serving plates or shallow bowls.

Step 8.) Spoon or dollop the creamy vanilla yogurt mixture over or alongside the grilled pineapple.

Step 9.) Sprinkle generously with granola. If desired, add a few fresh blueberries, sliced strawberries, or sliced banana.

Step 10.) Garnish with fresh mint leaves if using. Serve immediately with a spoon.

  • A ripe pineapple is key for the best sweetness. Look for one that smells fragrant at the base.
